Zucchini- Pineapple Bread



With all the plentiful zucchini being ready to be picked in your gardens, here's a good bread recipe! Adding the crushed pineapple takes it over the top.

Zucchini - Pineapple Bread
3 eggs
2 cups sugar
1/2 cup oil
3 cups flour
1 tsp. baking soda
1 tsp. baking powder
2 cups grated zucchini
1 med. can crushed pineapple, drained
3/4 cup nuts
1tsp. vanilla

Directions;
Mix eggs, sugar, oil, and vanilla. Sift baking powder and soda together with flour; add to batter. Mix well. Add zucchini and mix. Next add the pineapple and nuts.
Bake for one hour @350* - makes 2 large pans

Happy, Happy, Happy!

I love using Avery Ellie-Ments sentiment dies! They're big and make a bold statement on the front of your cards.


I cut the "happy" sentiment out three times on the front of a piece of green card stock. Then I applied a piece of turquoise card stock to the back of the negative cut, to show through the cut out. I can keep my " three happy words" to use on other cards.
Next, I used the Paper Smoochy Balloon die to cut out some contrasting balloons and attach them together using twine. 

Then I adhered them to the card using some foam dots
 for a three-dimensional effect.

I'm using it again this year for Father's Day cards..

This happy sentiment could be used variety of occasions:
birthday, Mother's Day, Father's Day, graduation and the list goes on!

Slow Cooker Mexican beef Stew

In the summer, I'm all for crock pot meals...
Fast fixin' and go on about your day!


Slow Cooker Mexican beef Stew
6 servings

2 lb. beef stew meat
1 can diced tomatoes, undrained
1 cup frozen whole onions
1 teaspoon chili powder
1 package taco seasoning mix
1 can black beans, drained and rinsed
1 can whole kernel mexicorn, with red and green peppers, drained

instructions:
In slow cooker, mix beef, tomatoes, frozen onions, and chili powder.
Cover; cook on low heat setting 9 to 11 hours.
Stir in taco seasoning mix, using a whisk. Stir in corn and beans.
Increase heat to high.
Cover and cook 15 to 30 minutes or until thickened.
