Cajun Stuffed Chicken

We eat a lot of chicken in our house so I'm always looking for tasty, easy to fix recipes.This one is a winner! It looks like a fancy dish but really takes only a few minutes to whip it up!....and oh so good!


Cajun Chicken Stuffed With Pepper Jack Cheese And Spinach - Serves:4

lb chicken breast, boneless and skinless
4 ounces pepper jack cheese, shredded (you can use up to 6 oz)
1 cup frozen spinach thawed and drained (you can also use fresh cooked spinach)
2 tablespoons vegetable oil
2 tablespoons cajun seasoning
1 tablespoon breadcrumbs
Salt and pepper to taste
* optional: you can add half slices of pepperoni as I did in the photo below!

DIRECTIONS

  1. Preheat oven to 350 degrees.
Make 4 or 5 slots into each chicken breast, being careful to not cut completely through.
In a medium bowl, combine the pepper jack cheese, spinach, salt and pepper. Combine the Cajun seasoning and breadcrumbs together in a small bowl. Brush each chicken breast with the vegetable oil. Fill the slots that you've cut into the breasts with the spinach - cheese mixture.. Sprinkle any remaining spinach and cheese on top of chicken (optional).
Place the chicken on a foil-lined baking sheet (for easy cleanup). Bake for 35 to 40 minutes, or until chicken is cooked through.
