Cajun Chicken Stuffed With Pepper Jack Cheese And Spinach - Serves:4
- Preheat oven to 350 degrees.
Make 4 or 5 slots into each chicken breast, being careful to not cut completely through.
In a medium bowl, combine the pepper jack cheese, spinach, salt and pepper. Combine the Cajun seasoning and breadcrumbs together in a small bowl. Brush each chicken breast with the vegetable oil. Fill the slots that you've cut into the breasts with the spinach - cheese mixture.. Sprinkle any remaining spinach and cheese on top of chicken (optional).
Place the chicken on a foil-lined baking sheet (for easy cleanup). Bake for 35 to 40 minutes, or until chicken is cooked through.I'm linking to:
