Pumpkin Dessert Squares

Pumpkin Dessert Squares


Preparation Time: 15mins
Cooking Time: 40 mins
Serves: 8-12

Ingredients:

CRUST:
1 box yellow cake mix (reserve 1 cup)
1/2 cup butter, melted
1 egg, slightly beaten

FILLING:
2 cups canned pumpkin
1/2 cup brown sugar
2 eggs
2-1/2 tsp. pumpkin pie spice
2/3 cup milk

TOPPING:
1/4 cup white sugar
1 cup reserved cake mix
1 tsp. cinnamon
1/4 cup butter, melted

Preparation: Thoroughly mix crust ingredients and press into 9x13 baking pan.
Mix filling ingredients and put on top of the crust.

Mix topping and spread over filling.
Bake at 350° 40-50 minutes or until knife inserted into the center comes out clean. Cut into squares. Serve warm or cool. Garnish with whipped cream if desired.


After it cooled, I cut it into small squares and put it in cupcake papers.

  2. This looks delicious, Suzy! I've pinned it, but I'm currently trying to lose weight and it's working, so I don't want to backtrack. I always buy canned pumpkin and keep it on hand so I can bake with it throughout the year.
