Sometimes you just need some crunch in your life!
Once in a while, I crave a snack with a crunchy texture...especially when I'm watching my Pittsburgh Pirates play baseball. Here's an old Betty Crocker recipe that fits the bill.
Cheesy Ranch Chex Mix
Ingredients:
9 cups Corn Chex, Rice Chex or Wheat Chex
or a (combination of
the three)
2 cups bite-size pretzels
2 cups bite-size cheese crackers
3 Tabs. butter or margarine
1 pkg. (1 oz.) ranch dressing and seasoning mix
1/2 cup grated parmesan cheese
Directions:
1. In a large microwaveable bowl, mix cereal, pretzels, and
crackers.
In a small microwaveable bowl, microwave butter uncovered on
High for 30 seconds or until melted. Pour over cereal mixture; stirring until
well mixed. Stir in dressing mix and cheese until evenly coated.
2. Microwave uncovered on high 3 minutes, stirring each
minute.
Spread on wax paper or foil to cool. Store in air-tight
container.
* I like to add some peanuts *
