Cheeseburger Salad

I've been trying to cut back on bread products and wrap my burgers in lettuce...what a mess that can be! So I've found it easier to just have my burger and fixin's as a salad....problem solved!!
 Cheeseburger Salad
 2 or 3  servings

Ingredients:
 1 Lb. fresh ground beef
 ¼ cup sliced red onion
 4 cup lettuce (cleaned and chopped)
1 chopped large tomato
 20 slices of dill pickle
¼ cup shredded cheese of choice

Dressing:
½ cup miracle whip or mayonnaise
 2 tsp. French’s yellow mustard
 1 Tbs. heavy cream
 Garlic powder (or fresh)
Pepper and salt to taste

Directions:
Brown the ground beef in a pan with onions, garlic, pepper, and salt until cooked through. When finished cooking, quickly toss with tomato, pickles, and lettuce while hot. In a separate bowl blend your mustard, mayo, and cream until a pourable texture is attained. Slowly add you dressing mixture to the salad and toss well. Serve warm and top with any additional burger toppings you desire.
***I add sliced black olives, cucumber, and sweet pepper rings!

Portuguese Sausage Soup


Portuguese Sausage Soup
This is an old Rachel Ray recipe. When I first saw the ingredients, It didn't appeal to me, but I tried it, and now it's my favorite. The spices in the sausage give it a wonderful flavor!

ingredients:
1 lb. ground sweet sausage- browned and drained
1 med. onion chopped
chopped garlic to taste
3 medium white potatoes, peeled and diced
1-15 oz. can garbanzo beans (chickpeas)
1 large can diced tomatoes
2 quarts chicken broth
1-16 oz. bag frozen (or fresh) chopped spinach

Add all ingredients in a large soup pot and bring to a boil, then turn to simmer until potatoes are tender. Serve and enjoy!

Felting Creations

Have you ever met someone with an extraordinary talent and wish you were gifted like they are? I've often told hubby that I wish I could just once...step behind a mike and belt out a song or sit down at a piano and play a difficult piece perfectly. Just once, and I'd be happy. Seems like no matter how much we achieve it's never enough. We need to learn to be content and enjoy and the gifts God has given us...

Recently, I saw these felted animals on Pinterest and I think they are amazing!
So much talent here!
Just look at the detail in these!
 What is felting?
It's done with wool, special needles, and a mat. Pushing the needles through a small wool ball causes the wool to attach to itself and you can begin to form a shape. There's more to it than this but you get the idea.

Mackinac Island, Michigan

I've always wanted to visit Mackinac Island at the very top of Michigan,
 and last summer we finally made it!
An island that's only accessible by ferry boat and there are no vehicles on the island.
The well-mantained old homes are everywhere...


The flowers were out of this world! I guess it's all the horse manure lol




The building of the Grand Hotel is an amazing story in itself...
