Jim Thorpe, Pennsylvania

The town has been called the "Switzerland of America" due to the picturesque scenery, mountainous location, and architecture; as well as the
 "Gateway to the Poconos."
Jim Thorpe was founded in 1818 as Mauch Chunk...a name derived from the term Mawsch Unk (Bear Place) in the language of the native Munsee-Lenape Delaware peoples.




Everyone was decorated for Halloween and Fall!

 Thorpe was the first Native American to win a gold medal for the United States in the Olympics. Considered one of the most versatile athletes of modern sports, he won two Olympic gold medals in the 1912 Summer Olympics (one in classic pentathlon and the other in decathlon). He also played American football (collegiate and professional), professional baseball, and basketball.

This opera house is still in use!



I just loved the gingerbread detail on this house! The window boxes were brimming over with flowers, greens, and pumpkins!

EVERYTHING BAGEL RECIPE


low carb/keto EVERYTHING BAGEL RECIPE  
delicious everything bagel that is low carb using just cheese, eggs, and everything bagel seasonings for a filling low carb/keto bagel. 


PREP TIME -
2 minutes

COOK TIME -15 minutes

TOTAL TIME -17 minutes....yield 6

INGREDIENTS

·                     1 cup shredded cheese, cheddar, mozzarella, any kind of cheese that melts well. (I use bagged)

·                     1/2 cup GRATED parmesan, or Asiago, other hard, dry, grated cheese. ( I grate Asiago. It's a stronger cheese but I like the flavor it adds.)

·                     2 eggs

·                     2 tbsp everything bagel seasoning

INSTRUCTIONS

1.                 Preheat oven to 375 degrees Fahrenheit. 

2.  Combine the shredded cheese and egg in a bowl and mix it until the ingredients are fully combined.

    3.   Divide the mixture equally into six parts and press into a well-greased donut pan.

   NOTE: 2nd time, I made them bigger, I got five)

4.  Sprinkle everything bagel seasoning over the tops of the egg and cheese mixture. 

5.  Bake at 375 degrees for about 15 to 20 minutes until the cheese has fully melted and created a slight brown crust.

    6.  IMPORTANT: when you are ready to eat them, slice, toast, and let them sit for a few minutes to crisp up. They slice very well.

Let them cool before removing them from the pan to prevent sticking.

              NOTE:  Feel free to mix up your cheese selection - but stick with one grated hard, dry cheese (like parmesan or Asiago) to keep the flour-like texture. I store them in the fridge in a quart freezer bag. They are great for breakfast sandwiches...just add one fried egg and your choice of meat.

Visiting Mayberry

 Mount Airy is the childhood home of the late Andy Griffith. I don't think there's a baby boomer in the country that hasn't seen every episode of the "Andy Griffth Show" airing from 1960 to 1968.
Some time ago, on our way to the beach, we stopped at Mount Airy, North Carolina. A cute little town that makes you think that you've been transported to Mayberry.




Floyd's Barber Shop - You can get your haircut while you listen to Floyd's stories about Mayberry.
The Snappy Lunch - Where Andy and Barnie would grab lunch. But you can too! They are famous for the pork chop sandwich with chili, cole slaw, mustard, onion and tomato on top!

Take a tour of the town in a police car...


You can even stay overnight in Andy's childhood home!
"Mayberry days" take place every September in Mt. Airy. This year's special guest was actress Betty Lynn, age 91, better known as Thelma Lou...Barney's girlfriend on the show!
