Happy Birthday, Pittsburgh!!





Yesterday marked the 200th birthday of Pittsburgh, PA. and there has been so many changes in those years. Once called "Hell with the lid off " because of the heavy smoke hanging over the city from steel mills and industry, Pittsburgh is now clean and progressive. Our city has plenty to offer...from history to art:

Low Carb Snickerdoodles!!



This recipe comes from George Stella. He has an awesome collection of recipes and has had great success with weight loss using a low carb way of eating. This is one of my favorite cookie recipe!
2 net carbs per cookie :

Low carb Snickerdoodles
  • 2 ounces cream cheese, softened
  • 2 tablespoons butter, softened
  • 1 cup sugar substitute
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/4 cups Almond Flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
PREHEAT oven to 375°, and line a sheet pan with parchment paper.
  1. USING a stand or hand-held mixer, add the cream cheese, butter, sugar substitute, egg and vanilla extract to the mixing bowl, and beat on high until creamy and fluffy.
  2. ADD in almond flour, baking soda, cinnamon and salt, and mix on medium until well blended.
  3. USING a teaspoon or a cookie scoop, drop 16 evenly spaced cookies on the prepared sheet pan, and push down slightly on each.
      BAKE for 8-10 minutes, or until they begin to brown around the edges.  Let cool 10 minutes before serving.

* optional : CINNAMON TOPPING
  • 2 tablespoons sugar substitute
  • 1 teaspoon cinnamon
COMBINE the cinnamon topping ingredients, and sprinkle evenly over the top of each cookie before baking.

So if you've been avoiding sugar-pack carbs or just want a healthier cookie...this will satisfy your sweet tooth!

Inexpensive and Easy Window Cornice

 
Several years ago, I wanted an inexpensive window treatment for the large window in my bedroom. The room faced a treed back yard, so there wasn't a lot of  natural light coming in. Drapes were out of the question...
I decided to create a cornice with sheers!

Most cornices I had seen were made of wood and I was concerned about the weight. I didn't want large holes in the wall and having to worry about the fixture pulling out of the drywall. I don't know if I saw this idea in a book, or thought it up myself (we're talking about 25 years ago) but I made it using foam board and a hot glue gun! And it worked out perfectly without costing me an arm and a leg.

My granddaughter Brittany, recently moved into her own apartment with sliding glass doors to the patio. Unfortunately, she wasn't able to put up a decorative rod, but the door just needed something more to look finished. So, I suggested a cornice that could be attached to the top of the door frame.
