Pinch of This ~ Dash of That

Here are a couple of tasty recipes given to me by friends.I've tried both of them, and Hubby says they're keepers!

Kielbasa Vegetable Soup

3 lbs. kielbasa - cut in 1/4" slices,then cut into fourths.
1 lg. can veg - all (can substitute cut up frozen Italian vegetables)
2 cans diced tomatoes
1 qt.- 14 oz. bottle of v- 8 juice
1 head cabbage, cut small

In large pan with 2 qts. water, cook cut up kielbasa for 30 minutes.Then add drained mixed vegetables.
Add undrained tomatoes and juice.
Cook for 30 minutes more.
Add a few drops of hot sauce, if desired.
Add cut up cabbage and cook until cabbage is done.
This makes a large pot, and the leftovers are even more flavorful...Yummmm

Mandarin Orange Salad

1/2 cup sliced almonds
3 T. sugar
1/2 head lettuce
1/2 head romaine lettuce
5 whole green onions, chopped
1 - 11oz. can mandarin oranges,drained

Dressing:
1/2 tea. salt
Dash of pepper
1/4 cup oil
1 Tab. chopped parsley
2 Tab. sugar
2 Tab. vinegar
1/4 tea.tabasco sauce

instructions:
In a small pan over medium heat, cook almonds, stirring constantly until almonds are coated and sugar dissolved. Watch almonds carefully, as they will burn easily. This takes about 15 minutes. Cool and store in an air - tight container.

Mix all dressing ingredients and chill.
Mix lettuce and onions. just before serving, add almonds and oranges. Toss with the dressing.
This recipe serves 6.

  3. MMM...Kielbasi. When I say that word, people look at me and say, "What?".
    I'm from western PA, too. My parents and in laws live near Moraine State Park, and McConnel's Mills. That's where I grew up! Sigh...
