Low carb Smothered Pork Chops

I've been on this South Beach "way of eating" for almost a year now, and it's becoming a way of life for me. I don't call it a diet because it's just healthier eating......losing some weight is an added benefit!!
The internet is loaded with low carb recipes and I stumbled across one of the best the other day...

Low Carb Caramelized Onion-Bacon Pork Chops


Talk about good...these were awesome. My husband asks everyday "When are you makin' those chops again?



Caramelized Onion & Bacon Smothered Pork Chops
Yield: 4 chops
Serving Size: 1 chop
Juicy, tender pork chops smothered in a creamy onion and bacon sauce. This might be the best low carb meal I've ever had!
Ingredients
  • 6 slices bacon, chopped
  • 2 small onions, thinly sliced
  • 1/4 tsp salt
  • 1/4 pepper
  • 4 bone-in pork chops, 1 inch thick
  • Salt and pepper to taste
  • 1/2 cup chicken broth
  • 1/4 cup heavy cream
Instructions
  1. In a large saute pan, cook bacon over medium heat until crisp. Use a slotted spoon to remove to a bowl, reserving bacon grease.
  2. Add onions to bacon grease and sprinkle with salt and pepper. Cook, stirring frequently, for 15 to 20 minutes, until onions are soft and golden brown. Add onions to bacon in the bowl.
  3. Increase heat to medium high and sprinkle pork chops with salt and pepper. Add chops to pan and brown on the first side 3 minutes. Then turn chops over and reduce heat to medium, cooking on the second side until internal temperature reaches 135F, about 7 to 10 more minutes. Remove to a platter and tent with foil.
  4. Add broth to pan and scrape up any browned bits. Add cream and simmer until mixture is thickened, 2 or 3 minutes. Return onions and bacon to pan and stir to combine.
  5. Top pork chops with onion and bacon mixture and serve.
Notes
Serves 4. Each serving has 6.3 g of carbs and 1.02 g of fiber. Total NET CARBS = 5.28 g.

  2. We're not low-carb people but I am still loving the look of these pork chops! I mean, add caramelized onions and bacon to pretty much anything and I'm so in :) Can't wait to give these a try!
