Suzy's Bruschetta Chicken

Here's one of those recipes that you come up with when you have to think of something different to do with chicken ...

Suzy's Bruschetta Chicken
Boneless chicken tenderloins ( browned and cooked thoroughly in a little olive oil.)
¼ cup onion, finely chopped
2 Tablespoons butter
1 Tablespoon minced garlic
2 cups of chicken broth
4 or 5 cups of  cooked spaghetti
½ jar of Sun-Dried Tomato Bruschetta

½ cup crumbly feta cheese

 Brown chicken in large non-stick skillet. Chop into bite-size pieces. Add chopped onion and broth. Simmer covered on low for 10 minutes, then add butter. When the butter has melted, add cooked spaghetti.


Top the spaghetti with spoonfuls of the Bruschetta. Let everything heat through and then top with feta cheese.
Just before serving, toss everything together with tongs and serve.
This has turned out to be one of our favorites!

  4. Years ago my husband and I were able to get bruschetta chicken at a local restaurant, but alas they no longer offer it. It was our favorite thing to order, but your recipe looks and sounds even better. We will be trying it!
